All the food we had in Quito was so tasty. But I think our favorite was the Locro de Papa soup, which is a local specialty. It’s a potato soup with cheese and garnished with avocado. Definitely a nice warm comfort food. I found a good recipe I adapted that we like. We cut the cheese down a little. If you can’t find achiote powder or paste, I found annatto seeds at Walmart that I use to infuse some oil and use that.
Of course, our favorite bread was the bizcochos you saw we had in Cayambe. There is no replicating those bad boys. You just have to go to Cayambe and get the real thing.
The fried corn was tasty with boiled hominy. I bought some to bring home to try to cook, but couldn’t fit it in the suitcase. I’ll try to find some around here, maybe at the latin grocery stores.
A big favorite of Steve and Veronica was the empanadas. Not just any empanadas, but the ones cooked by a certain local sister. So they had her over one day to make some fresh for us. They were very tasty. Veronica took a lesson, so we’ll see if she can reproduce those.
